Please enable Unicode / UTF-8 support for names, email
addresses, and all other text and notes fields for GPG Keychain
Access.
This Version 1.0b5 (1.0b5) destroyed the text & names in my
non-English keys, making them unreadable.
I now need to revert to an older version & reimport all of my keys. I'm praying that it didn't completely corrupt all of my keys. :(

I'm not able to reproduce this problem.
I need information over your exact language settings (screenshots please) and the content of ~/.gnupg/gpg.conf

I have something different related to UTF-8: names and comments are incorrectly displayed, see the (hopefully) attached screen-shot!
In an earlier version, 0.7.0RC2, on Mac OS X 10.4, Tiger, the display was correct. Now with version 1.0b7 on Mac OS X 10.6.8, Snow Leopard, UTF-8 encoded characters are displayed as a series bytes. I need to select a line that all the byte sequences are converted to the corresponding UTF-8 encoded character. The screenshot shows that this action was applied to the name of Adolfo De Unánue Tiscareño.
The cursor in the screen-shot also points to names where a wrong encoding is assumed. Ãtienne Bersac is Étienne Bersac and Åukasz Stelmach is of course Łukasz Stelmach. The à comes from the two bytes "C3 89" for U+00C9, the É character. The byte value 0x89 cannot be displayed. Similarly for Ł, which is U+0141 or "C5 81". Again, 0x81 cannot be displayed, so that 0xC5 is left, which is Å; 0xC3 is Ã.
~/.gnupg/gpg.conf has this contents:

Hey Peter,
did you try the latest nightly?
Could you please visit our nightly builds and download the latest GPGTools_Installer-latest.dmg file.
Run that on your system and see if the problem persists. If I remember correctly, this should be fixed already. Please let us know how it goes.

No, this nightly build "GPG Keychain Access-latest.dmg 05-Nov-2012 13:14 2.5M Untested nightly build", version 1.0b8, shows the same "byte oriented" display of UTF-8 encoded names and comments. And when I select an entry it changes to UTF-8 display, just as in version 1.0b7.
With "GPGTools_Installer-latest.dmg 17-Nov-2012 15:15 14M Untested nightly build" and installing all components I still see the same issue: I need to select an entry to change from the "byte display" to an UTF-8 view.

The key in your screenshot is working fine for me with the latest GPG Keychain Access nightly. I can't reproduce this problem.
Please do the following and send the output to team@gpgtools.org (contains user data, so please do not post in this public ticket tracker):

Des weiteren installier bitte die neueste Nightly des GPG Schlüsselbunds https://nightly.gpgtools.org/GPG%20Keychain%20Access-latest.dmg und schick uns Bildschirmfotos der Sachen die funktionieren und derer die es nicht tun.Bitte hänge auch die Ausgabe von "gpg2 -k" an. Gerne auch verschlüsselt (00D026C4)

Zeichen außerhalb US-ASCII, die gemäß meinen Einstellungen in UTF-8 kodiert werden, werden in der Anzeige des GPG Schlüsselbunds als eben diese UTF-8-Bytes, also als ein, zwei, drei oder mehr falsche Zeichen angezeigt, wie es das Bildschirmfoto, das ich anhänge, zeigt. Ansonsten scheint alles zu funktionieren.
Die Ausgabe von 'gpg2 -k' ist etwa 1.300 Zeilen lang und vollkommen korrekt, d.h., dass die in UTF-8-Form kodierten Zeichen als solche und nicht als fehlerhafte Bytes in der shell in GNU Emacs angezeigt werden.

Die Ergebnisse sind erzielt worden mit dem GPG Schlüsselbund vom 11. Dezember (letztes nightly build offenbar) und der Version "1.0 (85e4337)". Bevor ich ihn installierte, habe ich persönlich und manuell die vorherige Version (1.0b8, auch bei Nacht gebaut) in den Papierkorb befördert.

Hallo Peter, da ich kein System finden konnte auf dem ich dein Problem reproduzieren kann, hab ich hier eine Version des Schlüsselbunds mit erweiterter debug Ausgabe.
Um DebugLog einzuschalten führ bitte folgenden Befehl aus.
defaults write org.gpgtools.common DebugLog -bool YES
Dann starte den GPG Schlüsselbund, den ich dir angehängt hab und schick mir die Ausgabe aus der Konsole.
Bitte vergiss nicht DebugLog wieder auszuschalten wenn du fertig bist, indem du NO anstatt YES einsetzt. -

Endlich ein funktionierendes Programm! Danke!
Obwohl, etwas kann noch verbessert werden. Die eine Sache scheint schon beantragt worden zu sein, dass auch das Ablaufdatum des Schlüssel angezeigt (und als Sortierschlüssel benutzt) werden kann. Und die andere Sache hat mit diesen ungültig gewordenen Schlüsseln zu tun, die jetzt in grau hervorgehoben werden. Wenn ich einen dieser Schlüssel lösche, dann springt der "cursor" zurück auf den ersten Schlüssel, d.h., dass ich erneut nach unten rollen muss.
Dieses Rollen kommt doch wohl daher, dass das Programm nach dem Löschauftrag erneut die Schlüssel einliest und sicherheitshalber (?) die Nummer der Zeile löscht, auf der der cursor vorhin noch stand. Letzteres kann doch nur dann sinnvoll sein, wenn mehr als ein Schlüssel (= Zeile) gelöscht worden war.

Man kann bereits nach dem Ablaufdatum sortieren. Einfach einen Rechtsklick auf die Spaltenbezeichnungen machen und die Spalte einblenden.
Das Scrollen ist ein Verhalten des NSTreeControllers und bisher hab ich noch nichts eingebaut, um dies zu verhindern. -
